Egg Salad
Egg Salad is an easy dinner. Made with 6 hard-cooked eggs, 1 c. diced celery, 1 tbsp. grated onion, salt and pepper to taste and dash of cayenne pepper, this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.

Cut up the eggs coarsely.
Add celery, grated onion, seasonings and mayonnaise.
Mix lightly.
Serve in lettuce cups. Garnish with strips of pimento, chopped parsley and stuffed olives.
Makes 6 servings.
