Easy Pineapple Sherbet is an easy dinner. Made with 1 (15 1/4 oz.) can unsweetened crushed pineapple (undrained), 1 1/4 c. unsweetened pineapple juice, 1/4 c. sugar, 1 (12 oz.) can lemon-lime carbonated beverage, chilled and 3/4 c. evaporated skimmed milk, this recipe delivers authentic, satisfying flavors. Drain crushed pineapple, reserving 3/4 cup juice.
Set pineapple aside.
Combine reserved mixture juice, 1 1/4 cups pineapple juice and sugar in a saucepan; bring to a boil.
Reduce heat; simmer, stirring occasionally, 3 minutes, or until sugar dissolves.
Pour into a large bowl; cover and chill.
Stir in carbonated beverage and milk.
Pour into freezer container of a 5-quart hand-turned or electric freezer.
Freeze according to manufacturer's instructions.
Transfer to a large bowl; fold in crushed pineapple.
Store in freezer.
Yields 6 1/4 cups (113 calories, 1% from fat, per 3/4-cup serving).
