Easy Mexicorn Cornbread is an moderately easy dinner. Made with 1 c. corn meal, 1 c. milk, 1/2 tsp. baking soda, 1 c. mexicorn and 2 eggs, this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.

Mix dry ingredients and stir well.
Mix milk, beaten eggs and vegetable oil together.
Add dry ingredients and milk mixture together with Mexicorn and mix.
Stir in cheese.
Add onion.
Make sure mixture is stirred together.
Pour in hot greased skillet. Bake at 350Β° for 40 minutes.
