Easy Lemon Pie
Easy Lemon Pie is an moderately easy dinner. Made with 1 (3 1/4oz.) pkg. regular lemon pudding mix (not instant), 6 tbsp. sugar, 3 egg yolks, beaten, 1 1/2 c. water and 2 tbsp. butter, this recipe delivers authentic, satisfying flavors. Perfect for family dinners and special occasions.
Put pudding mix and sugar in top of a double boiler; stir in egg yolks.
Put pan over simmering water and gradually stir in water.
Cook slowly stirring constantly until mixture thickens.
Add butter, and spoon mixture into baked pie shell.
Beat egg whites, adding sugar gradually.
Spread meringue completely covering pie to edge of pie shell.
Bake at 350Β° about 15 minutes or until browned.
