Dixie Relish
Dixie Relish is an moderately easy dinner. Made with 2 c. chopped sweet red pepper, 2 c. chopped sweet green pepper, 1 qt. chopped cabbage, 2 c. chopped cucumbers and 2 c. chopped onions, this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.

Dissolve salt in 2 qts. cold water.
Pour over chopped vegetables and let stand for 1 hour.
Drain.
Comnbine sugar, vinegar and spices.
Add vegetables and simmer about 20 minutes. Bring to a boil.
Pack boiling hot into jars leaving 1/2 inch head space.
Adjust lids.
Process 15 minutes in a boiling water bath. Makes 5-6 pints.
