Blend sugar, corn syrup and water in medium sized saucepan. Cook over high heat, without stirring, until a teaspoon of syrup dropped in cold water forms a soft ball; remove from heat.

In a large bowl, beat egg whites until they form stiff peaks.

Pour 1/3 syrup on egg whites.

Cook remaining syrup fast over high heat until a teaspoon dropped into cold water forms a hard ball.

Pour in fine steam over egg white mixture, beating constantly.

Add vanilla; continue to beat until candy is very stiff and forms peaks that do not flatten out.

Swirl on wax paper.
