Divinity Fudge
Divinity Fudge is an moderately easy dinner. Made with 1/2 c. light corn syrup, 2 1/2 c. sugar, 1/4 tsp. salt, 1/2 c. water and 2 egg whites, room temperature, this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.
Combine first 4 ingredients in a heavy saucepan over medium heat, stirring constantly, until sugar is dissolved.
Cook without stirring to firm ball at 240° with candy thermometer. Beat egg whites until stiff, but not dry.
Pour about 1/2 of sugar mixture over egg whites, beating constantly.
Cook remaining syrup to soft crack, 270°.
Add syrup slowly to first mixture, beating constantly until mixture holds its shape.
Add vanilla and nuts. Drop by spoonful onto wax paper.
