Combine sugar, corn syrup and water in saucepan.

Stir over low heat until dissolved; bring to boiling, stirring often.

Cook without stirring to 248Β° or until a little dropped in a cup of cold water forms a firm ball.

While candy is cooking, beat egg white and cream of tartar stiff but not dry.

Use a large mixer bowl.

While beating constantly, pour syrup in a fine stream over beaten egg whites.

Add vanilla and continue to beat until candy forms a peak and loses its gloss.

Stir in chopped nuts by hand. Drop onto wax paper.

Make the size you want.

I use a heaping tablespoon.

Push off spoon with spatula or knife.

Use cherries for garnish.
