Dirty Rice
Dirty Rice is an moderately easy dinner. Made with 1 (6 oz.) box chopped livers, 1 (6 oz.) box chopped gizzards, 1 lb. ground beef or 1/2 lb. beef and 1/2 lb. pork, 1/2 c. shortening and 1 c. bell pepper, chopped, this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.

Parboil livers and gizzards in 3 cups water.
Keep stock. Simmer ground meat in shortening for 20 minutes. Add livers, gizzards, chopped vegetables and seasonings.
Cook 20 more minutes. Add 2 cups stock and simmer for 20 minutes. Add and mix in rice when ready to serve. Serves 12.
