Dill Pot Roast
Dill Pot Roast is an moderately easy dinner. Made with 3 to 4 lb. beef pot roast, 1/4 c. flour, 3 tsp. salt, 1/4 tsp. pepper and 3 tbsp. oil, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.
Combine 1/4 cup flour with salt and pepper.
Dredge roast in flour.
Brown in oil on stove in frying pan.
Place in roaster. Add onions, dill weed, vinegar and 1/2 cup water.
Cover; cook slowly for 2 hours.
Add carrots and cook 1 hour.
Remove meat to heated platter.
Pour liquid from roaster.
Mix 2 tablespoons flour and 1/2 cup water.
Add to cooking liquid, stirring constantly.
