Diet Chicken
Diet Chicken is an moderately easy dinner. Made with 3/4 c. mushrooms (canned or fresh), 8 oz. can tomatoes, 1/2 c. green pepper, chopped, 1/4 c. onion, chopped and 1 clove garlic, this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.

Combine mushrooms, tomatoes, pepper, onion, garlic, oregano, salt and pepper.
Place chicken on top.
Bring to boil.
Reduce heat.
Cover and simmer 25 minutes.
Remove chicken.
Combine cornstarch and water and stir in tomato mixture.
Cook until thickened.
Serve over rice.
