Diet Cake
Diet Cake is an moderately easy dinner. Made with 1 box raisins, 1 (20 oz.) can unsweetened crushed pineapple, 1 1/2 c. unsweetened applesauce, 2 c. liquid (pineapple juice and water) and 2 c. self-rising flour, this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.
Drain juice from pineapple and add water to make 2 cups.
Pour over raisins and cook until liquid is gone.
(Can be cooked ahead of time and refrigerated.)
Add slightly beaten eggs.
Add soda, flour, spices, pineapple and applesauce.
Mix well.
Add raisins and orange flavoring.
Pour into greased and floured Bundt or tube pan.
Place in cold oven and set at 325Β°.
Bake 1 hour. Let cool.
Store in cool place.
Freezes well.
