Diabetic Jello
Diabetic Jello is an moderately easy dinner. Made with 2 pkg. knox gelatin, 1 pkg. kool-aid (unsweetened), 1 c. cool water, 3 c. hot water and 1 tbsp. liquid sweetener, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

Sprinkle gelatin over 1/2 cup of the cool water and allow to stand until gelatin granules are moistened.
Dissolve Kool-Aid in the remaining 1/2 cup cool water.
Add the gelatin and Kool-Aid mixtures to hot water.
Add the liquid sweetener and sugar; mix well.
Refrigerate.
Yields 8 (1/2-cup) servings, 5 calories each.
