Denver Pitas
Denver Pitas is an moderately easy dinner. Made with 1/2 c. chopped onion, 1/2 c. chopped green pepper, 6 eggs, 8 slices bacon, cooked and crumbled and salt and pepper to taste, this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.

In a large skillet, saute onion and pepper in butter until tender.
Beat eggs, slightly; stir in bacon and salt and pepper. Pour egg mixture into skillet and cook over low heat, gently lifting cooked portions and tilting pan to allow uncooked portion to flow to the bottom of the pan.
Cook until the eggs are firm, but still moist, 3 to 5 minutes.
Cut the pitas in half and fill with egg mixture.
Makes 6 servings.
