Delicious Pork
Delicious Pork is an moderately easy dinner. Made with 2 lb. boneless pork loin, 1/2 c. butter, salt and pepper to taste, 3/4 lb. swiss cheese, grated and 2 tbsp. dijon mustard, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.
Cut pork into 1 1/2-inch slices.
Flatten slightly into a rounded shape.
Brown pork in butter; about 5 minutes per side. Season with salt and pepper and bake at 350° for 35 to 40 minutes in a well-greased pan.
Pour off fat.
Turn oven up to 500°.
Mix cheese, mustard and 2 tablespoons whipping cream in bowl.
Spread mixture over pork and bake at 500° for 3 to 5 minutes or until topping bubbles.
Remove pork from pan and keep warm.
In the pan, the pork was cooked in, mix apple juice and 3 1/2 tablespoons of whipping cream.
Cook over low heat, stirring constantly and scraping the bottom and sides of the pan.
Cook 3 to 5 minutes, until sauce is slightly thickened.
Pour over pork and sprinkle with parsley.
