Date Nut Balls
Date Nut Balls is an moderately easy dinner. Made with 1 c. pitted dates, 1 c. raisins, 1/2 c. dried apricots, 1/2 c. pitted prunes or figs and unsweetened orange juice (to moisten), this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

In food grinder, grind together dates, raisins, apricots and prunes/figs.
Combine with orange juice in 2-quart mixing bowl. Roll into bite-size balls.
Roll in coconut or in nuts. Refrigerate, covered, until time to serve.
Yields about 2 dozen.
