Date Balls
Date Balls is an moderately easy dinner. Made with 1/2 c. margarine, 2 c. sugar, 3 c. chopped dates, 4 eggs, well beaten and 1/2 tsp. vanilla, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

Combine first 4 ingredients; cook slowly in an iron skillet at 350Β° for about 15 minutes, or until thick, stirring constantly. Remove from heat; add vanilla, nuts and Rice Krispies.
Cool slightly.
Shape into balls with buttered hands.
Roll in coconut. Keep in a cool place.
Yield
50 balls.
