Danish Red Cabbage
Danish Red Cabbage is an moderately easy dinner. Made with 1 large red cabbage, cored and thinly sliced, 2 tbsp. fat (raw goose fat, salt pork or bacon fat), 1/2 c. wine vinegar (second choice, cider vinegar), 2 to 3 apples, peeled and cut up fine and 5 to 6 allspice berries, this recipe delivers authentic, satisfying flavors. Put cabbage in a heavy, porcelain lined iron pot with vinegar. Add fat.
Carefully bring to a boil.
Add a little water if necessary.
Add apples, allspice berries, salt, sugar and raisins. Cabbage should be juicy but not soupy.
Taste for salt and give the pepper mill a few turns.
