Daikon Koko
Daikon Koko is an easy dinner. Made with daikon, cut into eating pieces (enough for 1 gal.), 2 c. sugar, 1/2 c. vinegar, 1/3 c. table salt (i use hain sea salt) and yellow coloring (optional), this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

Boil sugar, vinegar and salt together. It will be very thick. Add coloring.
When lukewarm, pour over daikon.
Leave out
For a few hours, shaking the jar occasionally. Store in refrigerator.
