Dad's Armadillo Eggs
Dad'S Armadillo Eggs is an moderately easy dinner. Made with 3/4 c. any leftover cooked meat (chicken, sausage, beef, etc.), 1/4 c. any type cheese (cheddar, mozzarella or monterey jack), 1 clove garlic, 2 tbsp. onion and dried tomatoes (optional), this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.

Slit peppers lengthwise and remove seeds.
Leave stem on. Combine other ingredients in food processor and then stuff peppers with this mixture.
Bake at 375° for 15 to 20 minutes or until peppers are tender.
