Currant Muffins
Currant Muffins is an moderately easy dinner. Made with 2 c. sifted flour, 1/4 c. sugar, 1 tbsp. baking powder, 1 tsp. salt and 1/4 tsp. ground ginger, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

Sift together the flour, sugar, baking powder, salt and ginger.
Combine egg, milk and shortening; add to dry ingredients. Stir until all flour is moistened.
Fold in currants.
Spoon into greased muffin pans, filling cups 2/3 full.
Sprinkle with topping.
Bake at 425Β° for 20 minutes.
Yields 18 muffins.
