Cucumber Mousse
Cucumber Mousse is an moderately easy dinner. Made with 2 medium cucumbers, 1/2 c. sour cream, 2 tsp. vinegar, 1 tsp. salt and 1 tbsp. chopped onion, this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.

Peel and coarsely grate cucumbers.
Wrap in a paper towel and squeeze gently to completely remove juice.
Dissolve gelatin and salt in boiling water.
Add cold water and vinegar. Fold in sour cream and chill mixture until thickened.
Fold in cucumbers, onion and pepper.
Pour into greased mold and chill until firm. Serves 6.
