Creole Rice
Creole Rice is an moderately easy dinner. Made with 1 c. long grain rice, 3/4 c. onion, diced, 1 c. water, 2 tsp. vegetable oil and 2 ribs celery, peeled and diced, this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.

Place red pepper, onion, celery, garlic and vegetable oil in a 13 x 9 x 2-inch oblong pan and stir to combine.
Cook, uncovered, on High in microwave for 4 minutes.
Remove from oven; stir in rice, tomatoes and juice, hot pepper sauce and water.
Cook, uncovered, for 25 minutes, stirring 3 times, on High in microwave. Remove from oven.
Stir in lemon juice and black pepper to taste. Serve hot.
