Creole Peppers
Creole Peppers is an moderately easy dinner. Made with 2 or 3 green peppers, coarsely cut, 1 medium bunch celery, coarsely cut, 1 medium onion, coarsely cut, 1 tsp. salt and dash of pepper, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.

Cook bacon until crisp; set aside.
Add cut up peppers, celery and onion to bacon drippings.
Slowly saute until onion is tender, but not brown.
Add tomatoes, hot pepper, salt and pepper. Cover; simmer 20 minutes.
Blend corn meal with a little water; stir into simmering mixture.
Cover and simmer another 5 minutes. Crumble bacon on top at serving time.
