Creole Eggplant is an moderately easy dinner. Made with 2 small eggplants, 4 bacon slices, 1/4 c. onion, chopped, 1/4 c. green pepper, chopped and 1/2 c. fresh mushrooms, sliced, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.

Wash eggplants; cut in halves lengthwise.

Remove pulp, leaving 1/4-inch shell.

Chop pulp.

Combine bacon, onion, green pepper and mushrooms in large skillet.

Saute until bacon is crisp.

Add eggplant pulp, tomato, salt and pepper.

Bring to a boil, then simmer 10 minutes.

Place eggplant shells in 10 x 6 x 2-inch pan.

Place hot mixture into shells.

Add 1/2 inch water. Sprinkle cheese on top and bake at 350Β° for 30 minutes.
