Creamy Zucchini Casserole is an moderately easy dinner. Made with 4 c. shredded zucchini, 3/4 c. shredded carrots, 1/2 c. chopped onion, 6 tbsp. margarine and 1 box stove top stuffing mix, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.

π¨βπ³ Instructions
Saute vegetables in 4 tablespoons melted margarine. Stir in 1/2 box stuffing mix and all the seasoning packet.
Mix soup and sour cream together and stir into mixture.
Put into greased casserole.
Melt the other 2 tablespoons margarine.
Mix with the rest of the stuffing mix and put on top.
Bake at 350Β° for 30 minutes.
