Creamed Spinach
Creamed Spinach is an moderately easy dinner. Made with 2 lb. fresh spinach, 1 c. water, 1 tbsp. butter, 1 tbsp. flour and 1/2 c. milk, this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.

Wash spinach well to remove sand.
Separate leaves and cut off roots.
Bring water to boil in pot and add spinach.
Boil, uncovered, for about 2 minutes.
Drain and chop fine.
Melt butter and blend in the flour.
Add milk slowly and then the cream; stir constantly until smooth.
Bring to boil for about 1 minute.
Add chopped spinach.
Mix and heat through.
Add salt and grated onion; mix well.
Heat for another minute.
Serves 6.
