Creamed Spinach
Creamed Spinach is an moderately easy dinner. Made with 1 lb. fresh spinach, 1/4 c. butter or margarine, 1 medium onion, chopped, 1 clove garlic, crushed and 1/4 c. sour cream, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.
Wash spinach thoroughly.
Remove stems.
Tear leaves into large pieces.
Cook in a small amount of boiling water 5 to 10 minutes or until tender.
Drain.
Place on paper towels and squeeze until barely moist.
Melt butter in a large skillet; saute onion and garlic until tender.
Stir in next 4 ingredients.
Add the spinach and cook over low heat until thoroughly heated. Sprinkle with paprika.
Serves 4.
