Creamed Corn
Creamed Corn is an moderately easy dinner. Made with 2 tbsp. bacon drippings, 4 to 6 ears cut off corn, 1 tbsp. sugar, 1 tsp. each: salt and pepper and milk, this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.
In a heavy iron skillet, heat the bacon drippings and add the corn.
Stir on high to fry about 2 minutes.
Turn heat to low and add enough milk just to come to the top of the corn.
Add sugar, salt and pepper and stir well.
Let simmer about 30 minutes until corn is cooked.
Mix a little cornstarch with 2 tablespoons cold water and stir to dissolve.
Pour into corn to thicken the milk, stirring as you add the cornstarch mixture.
Check for salt and pepper.
Serves 4 to 6.
