Cream Puffs
Cream Puffs is an moderately easy dinner. Made with 1 c. water, 1/2 c. butter, 1/4 tsp. salt, 1 tsp. sugar and pinch of nutmeg, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

Boil water.
Add salt, sugar, nutmeg and butter.
Stir over heat until butter has melted.
Remove from heat and immediately pour in all flour at once.
Beat vigorously with a wooden spoon until thoroughly blended.
Then beat over moderate heat for 1 or 2 minutes until mixture is smooth and forms a ball that doesn't separate.
Cool slightly.
Add eggs, one at a time.
Beat vigorously after each egg until mixture is smooth.
Drop batter on greased cookie sheet.
Bake at 450° for 15 minutes, then reduce heat to 325° and bake 25 minutes.
Remove from oven; make a small slit in side of each puff.
Return to turned off oven for 10 minutes.
Cool on wire rack.
Makes 12 puffs, about 3-inches in diameter.
