Cream Fillings
Cream Fillings is an moderately easy dinner. Made with 1/2 c. flour, 2/3 c. sugar, 1/4 tsp. salt, 2 c. milk, divided and 3 egg yolks, this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.

Mix flour, sugar, salt and 1/4 cup milk on top of double boiler. Scald remaining milk and add to mixture. Cook over hot water until thick. Beat the egg yolks slightly and add a little of hot mixture. Stir egg mixture into cream filling. Cook 2 minutes longer. Add butter and vanilla.
Spread 3/4 cup coconut in bottom of baked pie shell. Pour cream filling over it. Cover with meringue and sprinkle the remaining 1/4 cup coconut over its top before browning. Can use microwave until thick, stirring frequently.
