Crawfish Elegant
Crawfish Elegant is an moderately easy dinner. Made with 1 lb. crawfish peeled tails, rinsed, 1 1/2 sticks butter or oleo, 1 small bunch green onions, 1/2 c. chopped parsley and 3 tbsp. flour, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.

In skillet, saute crawfish in 1/2 stick oleo for 10 minutes. In another skillet, saute green onions and parsley in 1 stick oleo. Blend in flour and gradually half and half, stirring constantly until thickened.
Add sherry and crawfish being careful not to add fat in bottom of pan.
Season to taste.
Serve in patty shells, over rice or pasta.
Freezes well.
