Cranbrosia
Cranbrosia is an moderately easy dinner. Made with 2 c. fresh cranberries, coarsely ground, 1 c. sugar, 1 (11 oz.) can mandarin oranges, well drained, 1 (8 oz.) can pineapple tidbits, well drained and 1 c. coconut, this recipe delivers authentic, satisfying flavors. Simple to make and full of bold, satisfying flavors.
Combine cranberries and sugar; mix well to dissolve sugar. Drain and reserve liquid from oranges and pineapple.
Add fruit and coconut to cranberries.
Sprinkle gelatin over 3/4 cup combined juices to soften.
Heat over medium temperature to dissolve gelatin.
Add to fruit.
Fold in sour cream.
Whip the cream and fold into fruit mixture.
Place in 2-quart mold.
Chill overnight.
