Cranberry Fruit Bread
Cranberry Fruit Bread is an impressive baked good you can prepare in about 1 hour 34 minutes. Made with bag (12 oz.) fresh or frozen cranberries, halved, c. pecan halves, c. chopped, mixed candied fruit, c. chopped dates and c. golden raisins, this recipe delivers authentic, satisfying flavors. Perfect for family dinners and special occasions.
Combine cranberries, pecans, fruit, dates, raisins and orange peel with 1/4 cup flour; set aside.
In another bowl, combine sugar, baking powder, baking soda, salt and remaining flour; set aside.
In a large mixing bowl, beat eggs.
Add orange juice, shortening and water.
Add flour mixture; stir just until combined. Fold in cranberry mixture.
Spoon into three greased and wax paper-lined 8 1/2 x 4 1/2 x 2 1/2-inch loaf pans.
Bake at 350Β° for 60 to 65 minutes or until breads test done.
Yields 3 loaves.
