Cranberry Cottage Salad
Cranberry Cottage Salad is an moderately easy dinner. Made with 1 pkg. (1 tbsp.) unflavored gelatin, 1/4 c. water, 1 (16 oz.) carton creamy cottage cheese, 1 (8 oz.) can whole cranberry sauce and 1/4 tsp. salt, this recipe delivers authentic, satisfying flavors. Sprinkle gelatin over water in a small saucepan.
Cook and stir over low heat until dissolved.
Cool slightly.
Stir in cottage cheese, cranberry sauce and salt.
Chill until slightly firm.
Arrange pineapple slices on lettuce-lined platter.
With an ice cream dipper, scoop out salad mixture and place a mound on each pineapple slice.
Chill.
