Cracker Scallops
Cracker Scallops is an moderately easy dinner. Made with 2 lb. scallops, freshly ground black pepper, 3 tbsp. olive oil, 2 tbsp. finely chopped garlic and 1/2 c. finely diced sun-dried tomatoes in oil, this recipe delivers authentic, satisfying flavors. Dry scallops in paper towels.
Season with pepper.
Heat oil in large skillet over medium-high heat until very hot.
Add scallops, then garlic to skillet.
Immediately add tomatoes and toss.
Add crackers, lemon juice, 2 tablespoons of parsley and butter.
Cook and stir until scallops are cooked through and crackers are browned.
Garnish with remaining parsley.
Makes 4 servings.
