Cracker Cake
Cracker Cake is an moderately easy dinner. Made with 1 pkg. crackers, crushed (zesta), 3 c. pecans, chopped, 6 egg whites, 2 c. sugar and 1 tsp. cream of tartar, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.
Mix the cracker crumbs and pecans; set aside.
Beat the egg whites until stiff.
Mix the sugar and cream of tartar to egg whites.
Add pecans and crackers to egg white mixture.
Pour into a greased and floured oblong cake pan.
Bake in a 350Β° preheated oven for 15 minutes.
Let cool.
Spread with Cool Whip; sprinkle with coconut.
Refrigerate.
