Crab Enchilada
Crab Enchilada is an moderately easy dinner. Made with 1/2 c. olive oil, 4 buttons garlic, minced, 1 medium onion, minced, 1 medium green pepper, minced and 1/2 tsp. oregano, this recipe delivers authentic, satisfying flavors. Simple to make and full of bold, satisfying flavors.

Heat olive oil; simmer garlic, onion, green pepper, oregano and bay leaves in oil.
When transparent, add tomato sauce, tomato paste, water, sugar, salt and pepper.
Bring to boil and simmer for 1 hour.
Add crabs.
Cover and cook on low for 10 to 12 minutes.
Serve over rice.
