Crab Croquettes
Crab Croquettes is an impressive dinner. Made with 1/3 c. chopped mild onion, 6 tbsp. butter or margarine, 1/4 c. flour, dash of cayenne and 1/2 tsp. worcestershire sauce, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.

Saute onion in 4 tablespoons butter for 5 minutes.
Blend in flour and seasonings.
Add milk and cook until thick, stirring constantly.
Remove from heat; stir in lemon juice, parsley and crab meat.
Season to taste with salt.
Chill.
Shape into croquettes with hands.
Dip croquettes into egg, then in crumbs. Fry slowly in remaining butter until browned on both sides.
Serve piping hot with lemon wedges.
