Crab Cakes
Crab Cakes is an moderately easy dinner. Made with 1 lb. lump crab meat, 2 eggs, 2 tbsp. mayonnaise, 1 tbsp. prepared mustard and 1/4 tsp. salt, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

Crush saltines in Ziploc bag with rolling pin.
Line baking sheet with waxed paper, foil or Saran Wrap.
Sprinkle fine layer of crumbs.
Very lightly, combine all ingredients including unbeaten eggs.
Using serving spoon, put good sized dollops of mixture on top of crumbs.
Crush additional crumbs if needed to add a top layer.
Let set up under refrigeration until ready to serve.
Saute in butter or margarine, turning once.
