Cowboy Enchiladas
Cowboy Enchiladas is an moderately easy dinner. Made with 1 lb. hamburger, 1 (16 oz.) can refried beans, 2 cans enchilada sauce, 1 pkg. tortillas (soft) and 1 can mushrooms, sliced, this recipe delivers authentic, satisfying flavors. Perfect for family dinners and special occasions.

Preheat oven to 350Β°. Brown hamburger.
Mix together hamburger, refried beans, enchilada sauce, olives, mushrooms and tomatoes.
Spoon some of the mixture into each tortilla, making it the size you want; fold each one and put in a pan.
Mix the soup in a separate bowl with a little water or milk, about 1 1/2 cups.
Pour over enchiladas.
Cover with cheese.
Bake for 20 to 30 minutes.
Garnish with sour cream.
