Country Potatoes(Serves 4) is an easy dinner. Made with 4 baking potatoes, 2 tbsp. each dried tarragon and basil leaves, butter or olive oil and minced parsley (optional), this recipe delivers authentic, satisfying flavors. Simple to make and full of bold, satisfying flavors.
Peel potatoes. Cut into halves lengthwise. With small knife, cut each half diagonally into 1/8-inch slices, keeping the potato assembled. Lift with a pancake turner onto oiled baking sheet. Press down slightly with palm of hand to fan out slightly.
Brush with butter or olive oil.
Bake at 400Β° for 30 minutes. Sprinkle with herbs.
Bake 15 to 25 minutes longer.
Sprinkle with minced parsley, if desired, before serving.
