Country Breakfast
Country Breakfast is an moderately easy dinner. Made with 6 slices bacon, 1 pkg. (1 1/2 lb.) frozen potatoes (o'brien), 1 tsp. salt, 1/4 tsp. pepper and 6 eggs, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

Cook bacon until crisp and remove from skillet.
Pour off all but 2 tablespoons bacon fat.
Add potatoes, season with salt and pepper and cook according to directions on potato package. Carefully break 6 eggs over potatoes.
Cover and cook until egg whites are firm.
Garnish with bacon strips and sprinkle with grated cheese.
Cover and heat a moment longer until cheese just begins to melt.
