Country Breakfast
Country Breakfast is an moderately easy dinner. Made with 4 c. frozen hash brown potatoes, 1/2 c. chopped green pepper, 2 tbsp. chopped onion, 1/3 c. margarine and salt and pepper, this recipe delivers authentic, satisfying flavors. Bursting with flavor in every bite.

In 10-inch skillet, cook potatoes in margarine until partially thawed.
Add green pepper and onion and continue cooking until lightly browned.
Season to taste.
Break eggs over potato mixture. Cover; cook until eggs are done.
Top with cheese.
Cover; continue cooking until cheese is melted.
Mushrooms or green chiles may be added.
Yields 4 servings.
