Cornbread Salad

Mix cornbread mix, egg and milk. Bake in an 8-inch square pan at 400Β° for 15 to 20 minutes. Cool and crumble. Combine tomatoes, pepper, onion, pickles and bacon. Toss gently.
Mix mayonnaise and pickle juice. Mix well. Layer half each of cornbread, tomato mixture and mayonnaise mixture in a large glass bowl. Repeat layers; cover and chill 2 hours before serving.
