Cornbread Salad
Cornbread Salad is an moderately easy dinner. Made with 1 (8 oz.) box jiffy cornbread mix, 1 medium bell pepper, chopped, 1 medium onion, chopped, 3 to 5 tomatoes, peeled and chopped and 1 tbsp. sugar, this recipe delivers authentic, satisfying flavors. Packed with nutrients and delicious flavors.

Make cornbread according to directions.
Crumble 1/2 in bottom of baking pan or dish.
Layer vegetables and bacon in order given, saving enough bacon for top.
Combine mayonnaise, sugar and salad pickle.
Spread over vegetables and bacon layer.
Add remaining cornbread on top.
Chill until served.
