Cornbread Casserole
Cornbread Casserole is an moderately easy dinner. Made with 1 lb. ground beef, 1 box cornbread mix (jiffy), 3 small jalapeño peppers, 1 can creamed corn and 2 c. cheese, grated, this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.

Brown the ground beef.
Drain off the oil.
Cut up onion and peppers very small.
Mix together cornbread mix.
Use a Pyrex pan, if possible.
Pour 1/2 of cornbread mix into pan.
Spread evenly. Pour 1/2 of sweet creamed corn on top of mix.
Sprinkle cheese on evenly.
Spread all of the meat over the cheese.
Sprinkle onion and peppers on meat.
Add remaining ingredients.
Spread evenly. Bake until done.
Serves 4.
