Corn Zucchini Bake
Corn Zucchini Bake is an moderately easy dinner. Made with 1 egg, 2 c. shredded zucchini, 1 tbsp. instant minced onion or 1/4 c. chopped raw onions, 1 tbsp. grated parmesan cheese and 1/2 tsp. paprika, this recipe delivers authentic, satisfying flavors. In a mixing bowl, beat egg.
Stir in zucchini, onion, butter, milk, corn and cheese.
Pour into greased quart baking dish. Cover and microwave on High for 6 to 8 minutes or until set in center.
Sprinkle with crumbs, Parmesan cheese and paprika. Microwave one additional minute.
If serving later, microwave an additional 5 minutes before serving.
