Corn Tomato Chowder
Corn Tomato Chowder is an moderately easy dinner. Made with 2 oz. salt pork, 1 small onion, sliced, 2 1/2 c. (no. 2 can) corn, 2 c. potatoes, diced and 1 1/2 c. tomatoes, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.
Cut pork into small pieces and fry slowly to a golden brown in a large saucepan.
Add onion and cook slowly without browning for 5 minutes.
Add corn, potatoes and tomatoes in alternate layers. Sprinkle with salt, sugar and pepper.
Then add water and cook slowly until potatoes are tender.
Remove from heat and stir milk in slowly.
