Combine eggs, muffin mix, sour cream and melted butter.
Stir in both types of corn.
Pour into greased, oblong baking pan. Bake at 350Β° for 35 minutes.
Sprinkle grated cheese on the top and bake an additional 10 to 15 minutes.
This is a good potato substitute with ham or pork dinner.
